The Ultimate Vegan & Gluten-Free Jackfruit Rice Stuffing for Unforgettable Holiday Feasts
As the crisp autumn air settles in and the holiday season draws near, my heart is already brimming with festive cheer. There’s something truly magical about this time of year, filled with the aroma of warm spiced cookies and the comforting embrace of hearty stews. For me, it’s never too early to start planning the perfect holiday menu, especially when it involves dishes that everyone at the table can enjoy. While my partner, Tristan, might argue it’s premature for Thanksgiving and Christmas planning, he certainly wasn’t complaining when he tasted this incredible brown rice stuffing featuring jackfruit – a dish so flavorful, it’s sure to become a new holiday staple!

This jackfruit rice stuffing isn’t just a side dish; it’s a culinary revelation. Crafted to be both entirely vegan and naturally gluten-free, it stands out as the perfect offering for holiday gatherings where guests often have diverse dietary needs. Forget about compromising on flavor! This stuffing is a vibrant medley of fluffy brown rice, a colorful array of fresh vegetables, tart dried cranberries, crunchy mixed nuts, and the star ingredient – savory jackfruit confit. Each bite bursts with so much depth and complexity that you won’t even miss the meat, making it an ideal meatless stuffing option. Prepare for this to be your new go-to recipe for Thanksgiving, Christmas, and any special occasion demanding a truly delicious and inclusive side.

Why Choose Rice Stuffing Over Traditional Bread Stuffing?
For many, the word “stuffing” or “dressing” immediately conjures images of a beloved bread-based casserole, often made with stale bread cubes, herbs, and broth. I vividly remember my mom’s holiday stuffing, likely from a classic box mix, which was always my favorite part of the festive dinner spread. That nostalgic flavor is hard to beat!
However, as dietary preferences and restrictions have become more common, the need for alternatives has grown. Last Christmas, my thoughtful mother prepared a wonderful wild rice stuffing, knowing I had adopted a mostly gluten-free lifestyle (and yes, I do indulge in the occasional gluten-filled treat!). That wild rice creation was a revelation. It sparked an idea: every holiday table deserves at least one star dish that caters to everyone, whether they are gluten-free, vegan, or simply looking for a lighter, equally delicious option.
Traditional bread stuffings, while delicious, can be heavy and may not suit those avoiding gluten or animal products. Our jackfruit rice stuffing offers a fantastic solution. By swapping bread for wholesome brown rice, we create a dish that is naturally gluten-free and inherently lighter, yet still incredibly satisfying and flavorful. It provides a different, delightful texture – a hearty chew from the rice combined with the crunch of nuts and the chewiness of cranberries – that stands proudly alongside any traditional stuffing. It’s about ensuring no one feels left out of the holiday culinary joy, allowing everyone to gather and enjoy a truly inclusive feast.

Jackfruit: The Secret to a Hearty Meatless Stuffing
If you’ve ever explored my recipes, particularly my vegan cream stew, you’ll know that jackfruit is an absolutely phenomenal plant-based meat substitute. Its unique, stringy texture, especially when young and green, makes it an ideal ingredient for mimicking shredded meats in various dishes, from tacos to barbecue sandwiches, and now, a truly epic stuffing.
For this brown rice stuffing, I opted for young green jackfruit confit from Nature’s Charm, and it performed beautifully. Unlike ripe jackfruit, which is sweet and fruity, young green jackfruit has a neutral flavor that readily absorbs the seasonings it’s cooked with. The “confit” preparation means it’s packed in olive and rice bran oils along with herbs, sea salt, and garlic, infusing it with incredible savory notes right from the start. It’s a game-changer! When you open the can, you might even think it looks similar to tuna packed in oil, but rest assured, it’s 100% plant-based and bursts with delicious, versatile flavor. In fact, it’s so good and adaptable, I even enjoyed some for lunch today, bruschetta-style, on toasted baguette slices. Its ability to provide a hearty, satisfying “meatiness” without any actual meat is what elevates this stuffing from good to absolutely outstanding.

Effortless Elegance: Crafting Your Jackfruit Rice Stuffing
Creating this flavorful rice stuffing is surprisingly simple, especially since I designed it as a stovetop recipe. While some oven-baked stuffings offer a delightful crispy top, I often find myself juggling limited oven space during holiday preparations. A stovetop stuffing recipe eliminates that problem, allowing you to prepare a show-stopping side dish without monopolizing your oven all day on Thanksgiving or Christmas.

The process begins with the star ingredient: brown rice. In a sturdy pot, combine the brown rice with vegetable stock. Bring this mixture to a rolling boil, then reduce the heat to a gentle simmer, cover tightly with a lid, and let the rice cook until it’s perfectly tender and all the liquid has been absorbed. This slow simmering ensures each grain of rice is perfectly cooked and ready to soak up all the delicious flavors.
While your rice is gently cooking, you’ll prepare the aromatic foundation of the stuffing. In a separate pan, heat a touch of olive oil and sauté finely chopped onion, celery, sliced cremini mushrooms, and vibrant green onions until they soften and release their incredible fragrances. These vegetables form the savory heart of the stuffing. Next, introduce the drained jackfruit confit and minced garlic, sautéing for just a few more minutes to meld the flavors and allow the jackfruit to warm through and absorb the aromatics.
Once the rice is cooked and fluffed, and your vegetables and jackfruit are perfectly sautéed, it’s time to bring everything together. Gently combine the cooked brown rice with the sautéed vegetable and jackfruit mixture. Then, fold in the delightful additions of crunchy almonds and pecans, and the sweet-tart burst of dried cranberries. Give it a good stir, ensuring all the components are evenly distributed, and taste for seasoning. Adjust salt and pepper as needed to achieve your perfect balance of flavors.

And just like that, your incredible jackfruit rice stuffing is ready! It truly couldn’t be easier. To achieve that classic holiday presentation, I love serving this vegan and gluten-free stuffing in a beautiful casserole dish, giving it the look of a traditional oven-baked side. However, any large, elegant serving bowl or platter will work perfectly to showcase this vibrant dish.

Whether you’re preparing for the grand feasts of Thanksgiving or Christmas, or simply looking for an extraordinary weeknight meal, I wholeheartedly encourage you to make this jackfruit rice stuffing. It is unequivocally delicious – so incredibly flavorful and satisfying that I would happily enjoy it as a stand-alone main course. Of course, always leave room for dessert after such a fantastic meal!

This recipe is destined to become your new favorite holiday stuffing tradition. It’s a symphony of flavors and textures: the rich depth from the sautéed aromatics and mushrooms, the satisfying “meatiness” of the jackfruit confit, the delightful sweetness from the dried cranberries, and the perfect crunch provided by the almonds and pecans. Every forkful is a celebration of seasonal goodness, making it absolute holiday perfection.
Don’t hesitate to prepare this remarkable jackfruit stuffing for your upcoming holiday festivities. It not only makes for an unforgettable main event but also transforms into equally amazing leftovers for the days that follow. I recently enjoyed a bowl for breakfast, and discovered that starting my day with such a hearty, vegetable-rich meal left me feeling energized, healthy, and perfectly satiated. It’s truly a dish that keeps on giving!

Ingredients
- 1½ cups (280g) brown rice
- 2¼ cups (540ml) vegetable stock (reduced-sodium recommended for seasoning control)
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 stalks celery, finely chopped
- 7 oz (200g) cremini mushrooms, sliced
- 1 cup sliced green onions
- 1 teaspoon dried thyme
- ½ teaspoon ground sage
- 2 cans Nature’s Charm young green jackfruit confit, drained
- 2 cloves garlic, minced
- ⅓ cup chopped nuts (e.g., ¼ cup/27g pecans and 2 tablespoons/15g sliced almonds)
- ⅓ cup dried cranberries
- salt and pepper, to taste
Instructions
-
In a large pot, combine the brown rice and vegetable stock. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot tightly with a lid, and let it simmer for approximately 40 to 45 minutes, or until all the liquid is absorbed and the rice is tender. Turn off the heat and let the rice rest, still covered, for an additional 5 minutes to steam perfectly. Remove the lid and fluff the cooked rice gently with a fork.
-
While the brown rice is cooking, heat the olive oil in a large skillet over medium heat. Add the finely chopped onions, celery, sliced mushrooms, green onions, dried thyme, and ground sage. Sauté the vegetables, stirring occasionally, until the onions become translucent and the mushrooms are tender, about 8-10 minutes. Next, add the drained jackfruit confit and minced garlic to the skillet. Continue to sauté for another 2-3 minutes, allowing the jackfruit to warm through and absorb the savory flavors.
-
Transfer the sautéed vegetables and jackfruit mixture to the pot with the cooked brown rice. Add the chopped nuts (almonds and pecans) and dried cranberries. Stir everything together gently until well combined. Taste the stuffing and season with salt and freshly ground black pepper as needed to enhance the flavors. For serving, spoon the finished rice stuffing into a casserole dish or a large, elegant serving bowl.
